Betty was born on August 18, 1933 in Tekamah, Nebraska, the second of three children, to George and Mildred (Marshall) Plummer. She received her education in Tekamah, graduating from Tekamah High School in 1951.
On March 4, 1951, Betty married Robert E. Coffman. To this union two children were born; Dan and Denise. They resided on a farm north of Tekamah in Riverside Township for 24 years until moving into town in 1975.
Betty was a devoted wife for 64 years and loving mother, who took joy in helping Bob on the farm driving tractors and grain trucks while also keeping active in her children’s lives. She was a member of the First Presbyterian Church in Tekamah and served as the church organist for many years, playing at Sunday services, weddings and funerals. As a member of PW, (Presbyterian Women), Betty worked with the Hospitality Group preparing food and working in the kitchen for dinners and funerals held at church. Betty’s musical talent kept her busy as the organist for the Order of Eastern Star and Job’s Daughters for many years as well.
Betty also worked for Burt County 6R Country School, Farm Bureau Insurance and Burt County Bank Insurance Company in Tekamah.
Over the years, Betty has enjoyed bowling league, raising a large garden and canning. She was an excellent cook and baker, loved to read books and her card game of choice was ‘Pitch’. After she and Bob retired from farming in 1992, they started to enjoy traveling to different places, most especially to South Padre Island, Texas where, for over 20 years, they would spend wonderful winters together.
